Ingredients

  • 1 pound skirt steak
  • 2 tablespoons olive oil
  • salt and pepper, to taste
  • 2 pounds small potatoes, cut into wedges
  • 2 tablespoons rosemary, finely chopped
  • 2 tablespoons thyme, finely chopped
  • 2 tablespoons garlic, minced
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra-virgin olive oil
  • 1/2 cup red onion, finely diced
  • 1/4 cup parsley, finely chopped

Directions

  1. Preheat oven to 400°F (200°C).
  2. Season both sides of the steak with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add steak and cook for 5 minutes per side, or until steak is cooked to your desired doneness.
  4. On a large baking sheet, combine potatoes with rosemary, thyme, garlic, and a pinch of salt and pepper. Drizzle with olive oil and toss to combine.
  5. Roast potatoes in preheated oven for 20 minutes, or until golden and crisp.
  6. In a small bowl, whisk together balsamic vinegar, extra-virgin olive oil, red onion, and parsley.
  7. Once steak and potatoes are finished cooking, combine in a large bowl and top with dressing.
  8. Toss to combine and serve warm.
