Ingredients
1 pound skirt steak
2 tablespoons olive oil
salt and pepper, to taste
2 pounds small potatoes, cut into wedges
2 tablespoons rosemary, finely chopped
2 tablespoons thyme, finely chopped
2 tablespoons garlic, minced
1/4 cup balsamic vinegar
1/4 cup extra-virgin olive oil
1/2 cup red onion, finely diced
1/4 cup parsley, finely chopped
Directions
Preheat oven to 400°F (200°C).
Season both sides of the steak with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add steak and cook for 5 minutes per side, or until steak is cooked to your desired doneness.
On a large baking sheet, combine potatoes with rosemary, thyme, garlic, and a pinch of salt and pepper. Drizzle with olive oil and toss to combine.
Roast potatoes in preheated oven for 20 minutes, or until golden and crisp.
In a small bowl, whisk together balsamic vinegar, extra-virgin olive oil, red onion, and parsley.
Once steak and potatoes are finished cooking, combine in a large bowl and top with dressing.
Toss to combine and serve warm.
