Ingredients
- 1/2 cup butter, softened
- 3/4 cup light brown sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups mini marshmallows
- 2 cups semi-sweet chocolate chips
Directions
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- In a large bowl, cream together the butter and brown sugar until light and fluffy.
- Add the vanilla and egg and mix until combined.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Drop heaping tablespoons of the cookie dough onto the prepared baking sheets, about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are golden brown.
- Remove from the oven and let cool completely.
- Once the cookies have cooled, spread a generous layer of marshmallows on half of the cookies.
- Melt the chocolate chips in a double boiler and then dip the marshmallow-topped cookies into the melted chocolate.
- Place the dipped cookies on a parchment-lined baking sheet and let the chocolate set before serving.
