Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups mini marshmallows
  • 2 cups semi-sweet chocolate chips

Directions

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy.
  3. Add the vanilla and egg and mix until combined.
  4. In a medium bowl, whisk together the flour, baking powder, and salt.
  5. Add the dry ingredients to the wet ingredients and mix until just combined.
  6. Drop heaping tablespoons of the cookie dough onto the prepared baking sheets, about 2 inches apart.
  7. Bake for 8-10 minutes, or until the edges are golden brown.
  8. Remove from the oven and let cool completely.
  9. Once the cookies have cooled, spread a generous layer of marshmallows on half of the cookies.
  10. Melt the chocolate chips in a double boiler and then dip the marshmallow-topped cookies into the melted chocolate.
  11. Place the dipped cookies on a parchment-lined baking sheet and let the chocolate set before serving.
