Ingredients

  • 1 pizza dough (store-bought or homemade)
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 8 ounces boneless, skinless chicken breast, thinly sliced
  • Salt and pepper to taste
  • 1 cup shredded carrots
  • 1 cup shredded cucumber
  • 1 cup bean sprouts
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped peanuts
  • 1/4 cup hoisin sauce
  • 1/4 cup peanut sauce
  • 1/4 cup sweet chili sauce
  • 1/4 cup lime juice
  • 1/4 cup fish sauce
  • 1/4 cup sugar
  • 1/4 cup water

Directions

  1. Preheat your oven to 450°F (230°C).
  2. In a small saucepan, heat the vegetable oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  3. Add the chicken breast slices to the saucepan and season with salt and pepper. Cook until the chicken is no longer pink in the center, about 5-7 minutes. Set aside.
  4. Roll out the pizza dough on a lightly floured surface to your desired thickness.
  5. Transfer the dough to a baking sheet or pizza stone. Bake for 8-10 minutes, or until the crust is golden brown and crispy.
  6. While the pizza crust is baking, prepare the spring roll fillings. In a large bowl, combine the shredded carrots, cucumber, bean sprouts, cilantro, mint, basil, and peanuts. Mix well.
  7. In a separate bowl, whisk together the hoisin sauce, peanut sauce, sweet chili sauce, lime juice, fish sauce, sugar, and water to make the dressing.
  8. Remove the pizza crust from the oven and let it cool slightly.
  9. Spread the dressing evenly over the crust.
  10. Top the pizza with the cooked chicken and the spring roll fillings.
  11. Slice the pizza into wedges and serve.
  12. Enjoy your Vietnamese Spring Roll Pizza!
