Ingredients

  • 1 lb. dried navy beans
  • 1 large onion, diced
  • 4 cloves of garlic, minced
  • 1/4 cup apple cider vinegar
  • 1/2 cup Vermont maple syrup
  • 1 cup stout beer
  • 4 strips of bacon, cooked and crumbled
  • Salt and pepper to taste

Directions

  1. Soak the dried navy beans overnight in water.
  2. Drain the beans and place them in a large pot. Cover with fresh water and bring to a boil.
  3. Reduce the heat to a simmer and cook for 45 minutes, or until the beans are tender.
  4. Drain the beans and reserve the cooking liquid.
  5. In a large pot, sauté the onion and garlic until softened.
  6. Add the cooked beans, reserved cooking liquid, apple cider vinegar, Vermont maple syrup, and stout beer.
  7. Simmer for 20-30 minutes, stirring occasionally.
  8. Stir in the crumbled bacon and season with salt and pepper to taste.
  9. Serve hot.
