Ingredients
1 lb. dried navy beans
1 large onion, diced
4 cloves of garlic, minced
1/4 cup apple cider vinegar
1/2 cup Vermont maple syrup
1 cup stout beer
4 strips of bacon, cooked and crumbled
Salt and pepper to taste
Directions
Soak the dried navy beans overnight in water.
Drain the beans and place them in a large pot. Cover with fresh water and bring to a boil.
Reduce the heat to a simmer and cook for 45 minutes, or until the beans are tender.
Drain the beans and reserve the cooking liquid.
In a large pot, sauté the onion and garlic until softened.
Add the cooked beans, reserved cooking liquid, apple cider vinegar, Vermont maple syrup, and stout beer.
Simmer for 20-30 minutes, stirring occasionally.
Stir in the crumbled bacon and season with salt and pepper to taste.
Serve hot.
