1/4 cup fresh dill, chopped
1/4 cup fresh rosemary, chopped
2 teaspoons garlic, minced
1 lemon, quartered
2 pounds salmon, skin on
Directions
In a large bowl, mix together the brown sugar, salt, peppercorns, dill, rosemary, and garlic.
Add the lemon quarters to the bowl and mix everything together.
Place the salmon fillets in the bowl and cover them with the brine mixture.
Cover the bowl with plastic wrap and place it in the refrigerator and allow it to brine for at least 30 minutes.
Remove the salmon from the brine and pat it dry with paper towels.
Grill or bake the salmon according to your preference.
Interesting Facts
Salmon brining helps to keep the fish moist and tender when cooking.
Brine also helps to season the fish and can add flavor to the cooked salmon.
The longer the salmon is brined, the more flavorful and tender it will be.
