Ingredients

  • 2 cups mochiko flour
  • 1 1/2 cups sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 1/2 cup warm water
  • 1 teaspoon vanilla extract
  • 3 large eggs

Directions

  1. Preheat oven to 350°F. Grease a 9-inch round cake pan.
  2. In a large bowl, whisk together the mochiko flour, sugar, baking powder, and salt.
  3. Add the vegetable oil, warm water, vanilla extract, and eggs and mix until everything is well combined.
  4. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
  5. Remove from the oven and let cool completely before glazing.
