Ingredients
2 tablespoons olive oil
1 pound large shrimp, peeled and deveined
1/2 cup onion, finely chopped
2 cloves garlic, minced
1/4 cup white wine
1/2 cup chicken broth
1/4 cup half and half
2 tablespoons freshly squeezed lemon juice
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons chopped fresh parsley
Directions
Heat the olive oil in a large skillet over medium-high heat.
Add the shrimp and cook for about 3 minutes, stirring frequently.
Add the onion and garlic and cook for an additional 2 minutes.
Add the wine and chicken broth and bring to a boil.
Reduce the heat to low and stir in the half and half, lemon juice, salt and pepper.
Simmer for about 5 minutes, stirring occasionally.
Stir in the parsley and serve.
