Ingredients

  • 2 tablespoons of butter
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • 4 cups of vegetable or chicken stock
  • 3 cups of fresh or frozen peas
  • 1/2 cup of cream or milk
  • Salt and pepper to taste

Directions

  1. Melt the butter in a large pot over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Stir in the thyme and cook for another minute.
  4. Add the stock and bring to a boil. Reduce the heat and simmer for 10 minutes.
  5. Add the peas and cook for another 10 minutes.
  6. Puree the soup using a blender or immersion blender. Return the soup to the pot.
  7. Stir in the cream or milk and season with salt and pepper.
  8. Simmer for 5 minutes and serve.
