Ingredients

  • 4 cups peeled and diced potatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper, to taste

Directions

  1. In a large pot, melt butter over medium-low heat. Add in onions and garlic, and cook until softened, about 5 minutes.
  2. Add the flour and stir to combine. Cook for an additional minute.
  3. Pour in the chicken broth and add the potatoes. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the potatoes are tender.
  4. Stir in the cream and season with salt and pepper. Simmer for an additional 5 minutes.
  5. Serve hot with your favorite toppings.
