Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 cups spinach, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheese, divided

Directions

  1. Preheat oven to 350°F (175°C).
  2. Heat oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  3. Add mushrooms, spinach, salt, and pepper. Cook for 5 minutes until spinach is wilted and mushrooms are softened.
  4. In a medium bowl, whisk together eggs, milk, and ¼ cup of the cheese.
  5. Spread the cooked vegetables in the bottom of a 9-inch pie dish. Pour the egg mixture over the vegetables.
  6. Sprinkle the remaining ¼ cup of cheese on top.
  7. Bake for 20-25 minutes until center is set and top is golden brown.
  8. Let cool before serving.
