1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
8 ounces mushrooms, sliced
2 cups spinach, chopped

Directions
Preheat oven to 350°F (175°C).
Heat oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
Add mushrooms, spinach, salt, and pepper. Cook for 5 minutes until spinach is wilted and mushrooms are softened.
In a medium bowl, whisk together eggs, milk, and ¼ cup of the cheese.
Spread the cooked vegetables in the bottom of a 9-inch pie dish. Pour the egg mixture over the vegetables.
Sprinkle the remaining ¼ cup of cheese on top.
Bake for 20-25 minutes until center is set and top is golden brown.
Let cool before serving.
