Ingredients

  • 2 cups of diced vegetables (carrots, potatoes, peas, etc.)
  • 1 teaspoon of olive oil
  • Salt and pepper to taste
  • 2 cloves of garlic, minced
  • 1/2 cup of vegetable broth
  • 1/4 cup of unsweetened almond or coconut milk
  • 1 tablespoon of fresh herbs (parsley, thyme, oregano, etc.)

Directions

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the vegetables and garlic, and sauté until the vegetables are tender, about 5 minutes.
  3. Add the vegetable broth, almond or coconut milk, salt and pepper.
  4. Bring the mixture to a gentle boil, reduce the heat to low, and simmer for 5 minutes.
  5. Transfer the mixture to a blender or food processor and blend until smooth.
  6. Add the herbs and blend until combined.
  7. Serve warm.
