Ingredients
- 1 lb. shrimp, peeled and deveined
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/4 cup white wine
- 1/4 cup vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
Directions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the onion and garlic and sauté until the onion is soft, about 3 minutes.
- Add the bell peppers and sauté for another 3 minutes.
- Add the shrimp and cook until they are pink and just cooked through, about 5 minutes.
- Pour in the white wine and vegetable broth, and bring to a simmer.
- Stir in the oregano, basil, salt, and pepper, and simmer for another 5 minutes.
- Serve with Parmesan cheese, if desired.
