Ingredients

  • 1 lb. shrimp, peeled and deveined
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/4 cup white wine
  • 1/4 cup vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion and garlic and sauté until the onion is soft, about 3 minutes.
  3. Add the bell peppers and sauté for another 3 minutes.
  4. Add the shrimp and cook until they are pink and just cooked through, about 5 minutes.
  5. Pour in the white wine and vegetable broth, and bring to a simmer.
  6. Stir in the oregano, basil, salt, and pepper, and simmer for another 5 minutes.
  7. Serve with Parmesan cheese, if desired.
