Ingredients
- 4 large bell peppers, halved and seeded
- 1 tablespoon olive oil
- 1/2 cup diced onion
- 1 teaspoon minced garlic
- 1 cup cooked black beans
- 1 cup cooked brown rice
- 1 cup corn kernels
- 1/4 cup salsa
- 2 tablespoons taco seasoning
- 1/2 cup shredded cheese
Directions
- Preheat oven to 375 degrees F.
- Brush the pepper halves with olive oil and place them in a 9x13 inch baking dish.
- In a large skillet, heat the oil over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
- Add the black beans, rice, corn, salsa, and taco seasoning. Cook until heated through, about 3 minutes.
- Divide the mixture between the pepper halves and top with cheese.
- Bake for 20 minutes, or until the peppers are tender and the cheese is melted.
- Serve with sour cream, guacamole, and extra salsa.
