Ingredients

  • 4 large bell peppers, halved and seeded
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1 teaspoon minced garlic
  • 1 cup cooked black beans
  • 1 cup cooked brown rice
  • 1 cup corn kernels
  • 1/4 cup salsa
  • 2 tablespoons taco seasoning
  • 1/2 cup shredded cheese

Directions

  1. Preheat oven to 375 degrees F.
  2. Brush the pepper halves with olive oil and place them in a 9x13 inch baking dish.
  3. In a large skillet, heat the oil over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  4. Add the black beans, rice, corn, salsa, and taco seasoning. Cook until heated through, about 3 minutes.
  5. Divide the mixture between the pepper halves and top with cheese.
  6. Bake for 20 minutes, or until the peppers are tender and the cheese is melted.
  7. Serve with sour cream, guacamole, and extra salsa.
