Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1 (14.5-ounce) can diced tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup butter
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/4 cup cilantro, chopped

Directions

  1. Heat oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic, ginger, cumin, coriander, garam masala, turmeric, chili powder, black pepper, and salt. Cook for 1 minute, stirring constantly.
  2. Add the diced tomatoes and cook for 5 minutes, stirring occasionally.
  3. Add the heavy cream, butter, and chicken cubes. Cook for 10 minutes, stirring occasionally.
  4. Add the chickpeas and cook for 5 minutes, stirring occasionally.
  5. Add the cilantro and cook for 1 minute, stirring constantly.
  6. Serve hot.
