Ingredients

  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 large red bell peppers, cored and cubed
  • 2 large green bell peppers, cored and cubed
  • 2 large yellow bell peppers, cored and cubed
  • 1/2 red onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup mozzarella cheese, cubed
  • 12 wooden skewers

Directions

  1. In a small bowl, whisk together the honey, mustard, olive oil, garlic powder, salt, and pepper.
  2. In a large bowl, combine the bell peppers, onion, tomatoes, feta, and mozzarella. Pour in the honey mustard dressing and mix until all the vegetables are evenly coated.
  3. Thread the vegetables onto the skewers, alternating between different types of vegetables.
  4. Place the skewers on a baking sheet lined with parchment paper. Bake at 400 °F for 15 minutes, or until the vegetables are tender.
  5. Serve warm or cold.
