Ingredients

  • 1 tablespoon olive oil
  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup apricot jam
  • 2 tablespoons Dijon mustard
  • 1/4 cup chicken broth
  • 1/2 cup fresh pineapple, diced

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the chicken breasts with salt and pepper.
  3. Add the chicken to the skillet and cook for 4-5 minutes per side, or until cooked through.
  4. Remove the chicken from the skillet and set aside.
  5. In a small bowl, whisk together the apricot jam, mustard, and chicken broth.
