Ingredients

  • 1 large eggplant
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375F/190C.
  2. Slice the eggplant into 1/4-inch thick rounds.
  3. Place the slices on a baking sheet lined with parchment paper.
  4. Brush the slices with olive oil and season with garlic powder, Italian seasoning, salt, and pepper.
  5. Bake for 20-25 minutes, flipping halfway through, until the chips are golden brown and crispy.
  6. Serve with your favorite dip or as part of your meal.
