Ingredients
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 cups cooked rice
- 2 cups cooked broccoli
- 2 cups shredded cheese
- 1/4 cup breadcrumbs
- Salt and pepper to taste
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Heat the olive oil in a skillet over medium heat. Add the garlic and onion and cook until the onion is softened and transparent, about 5 minutes. Add the cooked rice and broccoli and stir to combine.
- Spread the broccoli mixture into the prepared baking dish. Sprinkle with the shredded cheese and breadcrumbs. Bake for 20 minutes, or until the cheese is melted and bubbly.
- Serve hot.
