Ingredients
- 2 tablespoons butter
- 1/2 cup diced yellow onion
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups vegetable broth
- 2 cups broccoli florets
- 1 cup shredded sharp cheddar cheese
- Salt and pepper to taste
- Optional toppings: croutons, extra cheddar cheese, and/or parsley
Directions
- Melt butter in a large pot over medium-high heat.
- Add onion and garlic and sauté for 4-5 minutes until onion is softened.
- Stir in flour and cook for 1 minute.
- Slowly whisk in broth and bring to a boil.
- Reduce heat to low and simmer for 10 minutes.
- Add broccoli and simmer for an additional 10 minutes.
- Stir in cheese and season with salt and pepper.
- Serve with optional toppings and enjoy!
