In a medium bowl, combine the gooseberries, sugar, cinnamon, and salt. Set aside.
In a large bowl, combine the flour and butter. Using a pastry blender, cut the butter into the flour until it resembles coarse crumbs. Stir in the cold water until the mixture forms a dough.
Divide the dough in half and roll each half out on a lightly floured surface into two 8-inch circles. Place one of the circles into a 9-inch pie plate. Pour the gooseberry mixture into the pie plate.
Place the second circle of dough over the top of the pie and fold the edges of the top and bottom crusts together. Crimp the edges with a fork to seal the pie.
Bake for 30 to 35 minutes, or until the crust is golden brown and the filling is bubbly.
