Ingredients

  • 1 cup long-grain white rice
  • 1 teaspoon olive oil
  • 3-4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 cup orange juice
  • 2 tablespoons cilantro, chopped

Directions

  1. Rinse the rice in a fine-mesh strainer until the water runs clear.
  2. Heat the olive oil in a large saucepan over medium heat. Add the garlic and cook until fragrant, about 1 minute.
  3. Add the cumin, paprika, red pepper flakes, and salt to the pan and stir to combine.
  4. Add the rice to the pan and stir to coat with the spices. Cook for 1-2 minutes, stirring constantly.
  5. Add the orange juice to the pan and stir to combine. Bring the mixture to a boil, then reduce the heat to low and cover the pan.
  6. Simmer for 15 minutes, or until the rice is cooked through and the liquid has been absorbed.
  7. Remove the pan from the heat and stir in the cilantro. Serve warm.
