Ingredients

  • 1 9-inch unbaked pie crust
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 1 cup diced mushrooms
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 large eggs
  • 1 cup half-and-half
  • 1/2 cup grated cheddar cheese
  • 1/4 cup grated Parmesan cheese

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a large skillet over medium heat, saute the onion, bell pepper, mushrooms, and garlic in the olive oil until the vegetables are tender, about 5 minutes. Add the oregano, basil, salt, and pepper, and cook for another minute.
