Ingredients

  • 2-3 lb pork butt, bone-in
  • 1/4 cup of your favorite barbecue rub
  • 1/2 cup apple juice
  • 2 tablespoons olive oil

Directions

  1. Trim any excess fat from the pork butt, leaving a 1/8 inch fat cap.
  2. Generously rub the pork butt with the barbecue rub.
  3. Place the pork butt on a sheet pan and drizzle with the olive oil and apple juice.
  4. Cover the pork butt with plastic wrap and refrigerate overnight.
  5. Remove the pork butt from the refrigerator and let it sit at room temperature for 30 minutes.
  6. Prepare your smoker or grill for indirect heat cooking at 225°F.
  7. Place the pork butt on the smoker or grill and cook for 2-3 hours, or until the internal temperature reaches 205°F.
  8. Remove the pork butt from the smoker or grill and let it rest for 15 minutes before slicing.
