Ingredients

  • 1 large butternut squash, peeled and grated
  • 2 eggs, lightly beaten
  • 1/2 onion, minced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  2. In a large bowl, combine the grated squash, eggs, onion, olive oil, cinnamon, nutmeg, ginger, salt and pepper. Mix until everything is well blended.
  3. Pour the mixture into the prepared baking dish. Bake in the preheated oven for 30-40 minutes, or until golden brown.
  4. Serve warm and enjoy!
