Ingredients

  • 1 block extra-firm tofu
  • 1 tablespoon vegetable oil
  • 1 cup kimchi
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables
  • 3 cups cooked white rice
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon chili powder
  • 1 teaspoon sugar
  • 2 tablespoons sesame seeds

Directions

  1. Drain and press the tofu. Cut into small cubes.
  2. Heat the oil in a large skillet over medium heat. Add the tofu and cook until golden and crispy, about 10 minutes.
  3. Add the kimchi and onion to the skillet. Cook for 5 minutes, stirring occasionally.
  4. Add the garlic, mixed vegetables, and cooked rice. Cook for an additional 5 minutes, stirring occasionally.
  5. Add the soy sauce, sesame oil, chili powder, and sugar. Cook for 2 minutes, stirring often.
  6. Stir in the sesame seeds and cook for 1 minute.
  7. Serve hot.
