Easy Tofu Salad with Tuna and Watercress
Ingredients
1 block extra-firm tofu
1 tablespoon vegetable oil
1 cup kimchi
1 onion, diced
2 cloves garlic, minced
1 cup frozen mixed vegetables
3 cups cooked white rice
2 tablespoons soy sauce
1 teaspoon sesame oil
1 teaspoon chili powder
1 teaspoon sugar
2 tablespoons sesame seeds
Directions
Drain and press the tofu. Cut into small cubes.
Heat the oil in a large skillet over medium heat. Add the tofu and cook until golden and crispy, about 10 minutes.
Add the kimchi and onion to the skillet. Cook for 5 minutes, stirring occasionally.
Add the garlic, mixed vegetables, and cooked rice. Cook for an additional 5 minutes, stirring occasionally.
Add the soy sauce, sesame oil, chili powder, and sugar. Cook for 2 minutes, stirring often.
Stir in the sesame seeds and cook for 1 minute.
Serve hot.
