Preheat oven to 400°F. Line a baking sheet with parchment paper.
Scrub the sweet potatoes, then dry them with a paper towel. Prick each sweet potato several times with a fork.
Place the sweet potatoes on the prepared baking sheet. Bake for 25-30 minutes, or until tender when pierced with a fork.
Allow the potatoes to cool for 10 minutes. Cut the potatoes in half lengthwise and scoop out the insides into a bowl, leaving a ¼ inch thick layer of potato in the skins.
Mash the sweet potato in the bowl with a fork. Add in the melted butter, brown sugar, cinnamon, nutmeg, and salt. Stir until combined.
Divide the sweet potato mixture among the skins. Top each with mini marshmallows. Return to the oven and bake for 10-15 minutes, or until the marshmallows are lightly browned.
Serve warm.
