Turkey and Feta Grilled Sandwich

Ingredients

  • 2 slices of whole-wheat bread
  • 2 ounces of roasted turkey breast
  • 2 slices of feta cheese
  • 2 tablespoons of mayonnaise
  • 1 tablespoon of olive oil

Directions

  1. Heat a grill-pan over medium heat.
  2. Spread the mayonnaise evenly over one side of each slice of bread.
  3. Place one slice of bread on the grill-pan, mayonnaise-side down.
  4. Top the slice of bread with the turkey and feta cheese.
  5. Place the other slice of bread on the top of the sandwich, mayonnaise-side up.
  6. Brush the top of the bread with the olive oil.
  7. Cook the sandwich for 3-4 minutes, or until the bottom side of the bread is golden brown and the cheese is melted.
  8. Carefully flip the sandwich over and cook the other side for an additional 3-4 minutes, or until the bread is golden brown and the cheese is melted.
  9. Remove the sandwich from the pan and cut it in half.
  10. Serve with a side of chips or salad.
