Ingredients

  • 1 cup chocolate wafer cookies, finely crushed
  • 2 tablespoons cocoa powder
  • 1/4 cup light corn syrup
  • 1/4 cup dark rum
  • 1/4 cup confectioners' sugar
  • 1/4 cup finely chopped pecans

Directions

  1. In a medium bowl, combine the crushed cookies, cocoa powder, corn syrup, and rum. Mix together until everything is well combined.
  2. Scoop the mixture into balls, about 1 tablespoon each, and roll them in confectioners' sugar. Then roll them in the chopped pecans.
  3. Place the balls on a baking sheet lined with parchment paper and refrigerate for at least one hour.
  4. Serve chilled or at room temperature.
