Ingredients
2 cups all purpose flour
1 tablespoon baking powder
1 teaspoon salt
3 tablespoons cold butter, cubed
1 cup shredded cheddar cheese
1/2 teaspoon dried thyme
1 cup buttermilk
Directions
Preheat oven to 425°F.
In a large bowl, whisk together the flour, baking powder, and salt.
Using a pastry blender or your hands, cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
Stir in the cheddar cheese and thyme.
Pour in the buttermilk and stir until just combined.
On a floured surface, knead the dough a few times until it just comes together. Do not overwork the dough.
Roll out the dough to a 1/2" thickness and cut out 2-3" rounds.
Place the biscuits on a parchment-lined baking sheet and bake for 12-15 minutes, or until golden brown.
Allow to cool for 5 minutes before serving.
