Tuna and Goat Cheese Stuffed Tomatoes

Ingredients

  • 4 medium tomatoes
  • 1 can of tuna, drained and flaked
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1/2 cup of goat cheese, crumbled
  • 2 tablespoons of chopped fresh parsley
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375 degrees F.
  2. Cut the tomatoes in half lengthwise and scoop out the seeds.
  3. In a medium bowl, mix together the tuna, olive oil, garlic, goat cheese, parsley, salt and pepper.
  4. Fill the tomato halves with the tuna mixture.
  5. Spray a baking sheet with non-stick cooking spray and place the tomatoes on it. Bake in the preheated oven for 15 minutes, or until the tomatoes are tender.
  6. Serve warm.
