Ingredients

  • 6 strips bacon, cooked and crumbled
  • 3 cups shredded mozzarella cheese, divided
  • 2 cups cooked and mashed potatoes
  • 1/2 cup sour cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 cups crushed potato chips

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, stir together 1 1/2 cups of the mozzarella cheese, mashed potatoes, sour cream, salt, pepper, and garlic powder until evenly blended.
  3. Spread the potato mixture into a 9x13 inch baking dish.
  4. Sprinkle bacon and the remaining 1 1/2 cups of mozzarella cheese over the top.
  5. Top with crushed potato chips.
  6. Bake in preheated oven for 20 minutes, or until cheese is melted and bubbly.
