Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup almond flour
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 large eggs
- 4 tablespoons olive oil
- 1 (24-ounce) jar marinara sauce
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded parmesan cheese
- 2 tablespoons chopped fresh parsley
Directions
- Preheat oven to 400 degrees F.
- In a shallow bowl, combine almond flour, garlic powder, oregano, salt, and pepper. In a separate shallow bowl, lightly beat eggs.
- Dip chicken breasts in egg mixture, then coat with almond flour mixture. Make sure both sides of the chicken are completely coated.
- Heat olive oil in a large oven-safe skillet over medium heat. Add chicken to the skillet and cook for 4-5 minutes per side, or until golden brown and cooked through.
- Remove skillet from heat and spread marinara sauce over the chicken. Sprinkle with mozzarella and parmesan cheese.
- Bake in preheated oven for 15 minutes, or until cheese is melted and bubbly.
- Garnish with fresh parsley and serve. Enjoy!
