  • 1 can sweetened condensed milk
  • 1 can evaporated milk
  • 1/2 cup heavy cream
  • 1 cup sugar
  • 1/4 cup water
  • 4 ripe plantains
  • 3/4 cup sugar (for caramelizing plantains)
  • 1/4 cup water (for caramelizing plantains)

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  2. In a medium bowl, combine the flour and baking powder. Set aside.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  4. Add the egg yolks one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the flour mixture to the butter mixture, alternating with the whole milk. Begin and end with the dry ingredients.
  6. In a separate mixing bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the cake batter.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. While the cake is baking, prepare the tres leches mixture. In a blender, combine the sweetened condensed milk, evaporated milk, and heavy cream. Blend until well combined.
  10. Once the cake is done baking, remove it from the oven and let it cool for 10 minutes.
  11. Poke holes all over the cake using a toothpick or fork.
  12. Slowly pour the tres leches mixture over the cake, allowing it to soak in. Reserve some of the mixture for later use.
  13. Cover the cake with plastic wrap and refrigerate for at least 2 hours or overnight.
  14. To prepare the caramelized plantains, peel and slice the ripe plantains into thick diagonal pieces.
  15. In a skillet, combine the sugar and water. Cook over medium heat until the sugar caramelizes and turns golden brown.
  16. Add the plantain slices to the caramel mixture and cook for 2-3 minutes on each side, until they are caramelized and heated through.
  17. Remove the plantains from the skillet and set aside.
