Ingredients

  • 2 cups pumpkin puree
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • Pumpkin seeds for garnish

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.
  2. Add the pumpkin puree, vegetable broth, ground cinnamon, ground nutmeg, salt, and pepper to the pot. Stir well to combine all the ingredients.
  3. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes, allowing the flavors to meld together.
  4. Using an immersion blender, blend the soup until smooth and creamy. Alternatively, you can transfer the soup to a blender and blend in batches until smooth.
  5. Return the soup to the pot and stir in the heavy cream. Cook for an additional 5 minutes, stirring occasionally.
