Ingredients
- 2 pounds boneless, skinless chicken thighs

- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground paprika
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup dried apricots
- 1/4 cup chopped fresh cilantro, for garnish
Directions
- Step 1: Season the chicken thighs with salt, pepper, cumin, coriander, paprika, cinnamon, and cayenne pepper (if using).
- Step 2: Turn on the Instant Pot and select the 'Saute' function. Add the chopped onion, minced garlic, and grated ginger to the pot and saute for 2-3 minutes until fragrant.
- Step 3: Add the seasoned chicken thighs to the pot and brown them on both sides for about 2 minutes per side.
- Step 4: Pour in the chicken broth and scrape the bottom of the pot to release any browned bits. This will add extra flavor to the dish.
- Step 5: Add the drained and rinsed chickpeas and dried apricots to the pot.
- Step 6: Close the Instant Pot lid and set the valve to the 'Sealing' position. Cancel the 'Saute' function and select the 'Pressure Cook' or 'Manual' function. Set the cooking time to 15 minutes on high pressure.
- Step 7: Once the cooking time is complete, allow the pressure to release naturally for 10 minutes. Then, carefully quick release the remaining pressure by turning the valve to the 'Venting' position.
- Step 8: Open the lid and give everything a good stir. Taste and adjust the seasoning if needed.
- Step 9: Serve the Instant Pot Chicken Tagine over steamed couscous or with warm crusty bread. Garnish with chopped fresh cilantro.
- Step 10: Enjoy the exotic flavors of Morocco in the comfort of your own home!
