Ingredients

  • 2 pounds lamb or beef stew meat, cut into cubes
  • 3 tablespoons vegetable oil
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 cups beef or vegetable broth
  • 1 cup water
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • Chopped fresh parsley, for garnish

Directions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onions and minced garlic and sauté until they are translucent and fragrant.
  3. Add the meat cubes to the pot and brown them on all sides.
  4. Stir in the tomato paste and cook for an additional 2 minutes.
  5. Pour in the beef or vegetable broth and water, and bring the mixture to a boil.
  6. Reduce the heat to low, cover the pot, and simmer for 1 hour, or until the meat is tender.
  7. Add the diced carrots, potatoes, red bell pepper, and green bell pepper to the pot.
  8. Stir in the paprika, ground cumin, dried thyme, dried oregano, bay leaf, salt, and pepper.
  9. Cover the pot again and continue to simmer for an additional 30 minutes, or until the vegetables are cooked through.
  10. Remove the bay leaf from the pot and discard.
  11. Serve the gomgush hot, garnished with chopped fresh parsley.
