Ingredients
- 6 strips of bacon, cut into small pieces
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 large onion, diced
- 2 cups of ripe tomatoes, diced
- 1/4 cup of white sugar
- 1/4 cup of brown sugar
- 1/4 cup of apple cider vinegar
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1/4 teaspoon of cayenne pepper
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
Directions
- In a large skillet, cook the bacon over medium heat until it is crispy. Remove the bacon from the skillet and set aside.
- Add the olive oil to the same skillet and heat over medium heat. Add the garlic and onion and cook until the onion is soft and translucent, about 5 minutes.
- Add the tomatoes, sugars, vinegar, salt, black pepper, cayenne pepper, oregano, and thyme. Simmer over medium heat for 15 minutes, stirring occasionally.
- Add the bacon back to the skillet and simmer for an additional 5 minutes.
- Remove the skillet from the heat and let the mixture cool for 10 minutes.
- Transfer the mixture to a food processor and pulse until it is the desired consistency.
- Transfer the jam to an airtight container and store in the refrigerator for up to 2 weeks.
