Ingredients

  • 1 package udon noodles
  • 2 tablespoons vegetable oil
  • 1/2 cup diced onion
  • 1/2 cup diced carrots
  • 1/2 cup diced bell pepper
  • 1/2 cup sliced mushrooms
  • 1/4 cup teriyaki sauce
  • 1/4 cup soy sauce
  • 1/2 cup frozen peas
  • 1/2 lb cooked prawns
  • Salt and pepper to taste

Directions

  1. Cook udon noodles according to package instructions.
  2. Heat oil in a large skillet over medium-high heat.
  3. Add onion, carrots, bell pepper, and mushrooms. Cook for 3 minutes, stirring often.
  4. Add teriyaki sauce and soy sauce. Cook for 2 more minutes.
  5. Add frozen peas and cooked prawns. Cook for 2 more minutes.
  6. Season with salt and pepper to taste.
  7. Add cooked udon noodles to the pan and toss to combine.
  8. Serve hot.
