Robin’s Quinoa with Mushrooms and Spinach

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 4 cups cooked quinoa
  • 2 cups fresh spinach, chopped
  • Salt and pepper to taste
  • 1/4 cup Parmesan cheese, grated

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the mushrooms and cook until they are browned, about 8 minutes.
  4. Stir in the oregano, basil, and red pepper flakes.
  5. Add the cooked quinoa and spinach and cook until the spinach is wilted, about 3 minutes.
  6. Season with salt and pepper to taste.
  7. Sprinkle with the Parmesan cheese and serve.
