Ingredients
- 2 tablespoons olive oil

- 8 ounces mushrooms, sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes
- 4 cups cooked quinoa
- 2 cups fresh spinach, chopped
- Salt and pepper to taste
- 1/4 cup Parmesan cheese, grated
Directions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the mushrooms and cook until they are browned, about 8 minutes.
- Stir in the oregano, basil, and red pepper flakes.
- Add the cooked quinoa and spinach and cook until the spinach is wilted, about 3 minutes.
- Season with salt and pepper to taste.
- Sprinkle with the Parmesan cheese and serve.
