Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon red chili powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon cayenne pepper
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 carrot, diced
  • 1 cup frozen peas
  • 1 (14.5 ounce) can diced tomatoes
  • 1/2 cup plain yogurt
  • 1/2 cup coconut milk
  • 1 pound boneless skinless chicken breasts, diced
  • 1/2 cup fresh cilantro, chopped
  • Salt and ground black pepper to taste

Directions

  1. Heat oil in a large pot over medium heat.
  2. Add the onion and garlic and cook for 3-4 minutes, stirring occasionally.
  3. Add the ginger, turmeric, cumin, coriander, chili powder, black pepper, garam masala, and cayenne pepper and cook for 1 minute, stirring constantly.
  4. Add the bell peppers, carrot, and peas and cook for 3-4 minutes, stirring occasionally.
  5. Add the tomatoes, yogurt, and coconut milk and bring to a boil.
  6. Reduce the heat to low and add the chicken. Simmer for 15-20 minutes, stirring occasionally.
  7. Stir in the cilantro and season with salt and black pepper to taste.
  8. Serve the Timm Curry over hot cooked rice.
