1 onion, diced
2 cloves garlic, minced
1 tablespoon fresh ginger, grated

Salt and ground black pepper to taste
Directions
Heat oil in a large pot over medium heat.
Add the onion and garlic and cook for 3-4 minutes, stirring occasionally.
Add the ginger, turmeric, cumin, coriander, chili powder, black pepper, garam masala, and cayenne pepper and cook for 1 minute, stirring constantly.
Add the bell peppers, carrot, and peas and cook for 3-4 minutes, stirring occasionally.
Add the tomatoes, yogurt, and coconut milk and bring to a boil.
Reduce the heat to low and add the chicken. Simmer for 15-20 minutes, stirring occasionally.
Stir in the cilantro and season with salt and black pepper to taste.
Serve the Timm Curry over hot cooked rice.
