Ingredients
- 2 tablespoons vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon red chili powder
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon garam masala
- 1/2 teaspoon cayenne pepper
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 carrot, diced
- 1 cup frozen peas
- 1 (14.5 ounce) can diced tomatoes
- 1/2 cup plain yogurt
- 1/2 cup coconut milk
- 1 pound boneless skinless chicken breasts, diced
- 1/2 cup fresh cilantro, chopped
- Salt and ground black pepper to taste
Directions
- Heat oil in a large pot over medium heat.
- Add the onion and garlic and cook for 3-4 minutes, stirring occasionally.
- Add the ginger, turmeric, cumin, coriander, chili powder, black pepper, garam masala, and cayenne pepper and cook for 1 minute, stirring constantly.
- Add the bell peppers, carrot, and peas and cook for 3-4 minutes, stirring occasionally.
- Add the tomatoes, yogurt, and coconut milk and bring to a boil.
- Reduce the heat to low and add the chicken. Simmer for 15-20 minutes, stirring occasionally.
- Stir in the cilantro and season with salt and black pepper to taste.
- Serve the Timm Curry over hot cooked rice.
