Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sour cherries, sugar, cornstarch, lemon juice, and almond extract. Stir until well combined and set aside.
  3. In a separate bowl, whisk together the all-purpose flour and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.

  6. Pour the cherry filling into the prepared pie dish.
  7. Roll out the second disc of dough and cut it into strips for a lattice crust or create a decorative pie crust design of your choice. Place the strips or designs over the cherry filling.
  8. Brush the crust with the beaten egg wash and sprinkle with sugar.
