Ingredients
- 2 medium potatoes, boiled and mashed
- 1 cup frozen peas
- 1 small onion, finely chopped

- 1/2 teaspoon turmeric
- 1/2 teaspoon garam masala

- 20 store-bought samosa wrappers or phyllo pastry sheets
- 2 tablespoons oil, for brushing
Directions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine mashed potatoes, peas, chopped onion, minced garlic, grated ginger, ground cumin, ground coriander, turmeric, garam masala, chili powder, fresh cilantro, and salt. Mix well until all the ingredients are evenly incorporated.
- Take one samosa wrapper or phyllo pastry sheet and cut it in half diagonally to form two triangles.
- Place one tablespoon of the vegetable mixture on the lower side of the triangle. Fold the wrapper over the filling, forming a triangle shape. Continue folding until the entire strip is folded into a triangular pocket. Seal the edges with a little water.
- Repeat the process with the remaining wrappers and filling.
- Place the samosas on a baking sheet lined with parchment paper. Brush each samosa with oil to get a golden color.
