Ingredients

  • 3 lbs pork shoulder, cut into chunks
  • 1 cup soy sauce
  • 1 cup water
  • 1/4 cup mirin
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 2 tablespoons grated ginger
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Sesame seeds, for garnish
  • Green onions, chopped, for garnish

Directions

  1. In a slow cooker, combine soy sauce, water, mirin, rice vinegar, brown sugar, garlic, and ginger.
  2. Add the pork shoulder chunks to the slow cooker and toss to coat them well with the marinade.
  3. Cover the slow cooker and cook on low heat for 6-8 hours or on high heat for 4-5 hours, until the pork is tender and easily shreds with a fork.
  4. Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Set aside.
  5. In a small bowl, whisk together cornstarch and water to make a slurry.
  6. Pour the slurry into the slow cooker and stir well. Cover the slow cooker and cook on high heat for an additional 30 minutes, or until the sauce has thickened.
  7. Return the shredded pork to the slow cooker and stir to coat it with the thickened sauce.
  8. Serve the Slow Cooker Shoyu Pork over steamed rice, garnished with sesame seeds and chopped green onions.
  9. Enjoy!
