Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeno, diced (optional)
  • 1 red bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (8 ounce) can tomato sauce
  • 1/4 cup chopped fresh cilantro (optional)

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, jalapeno, and bell pepper. Cook, stirring occasionally, for 5 minutes.
  3. Stir in the cumin, chili powder, oregano, salt, and pepper. Cook, stirring occasionally, for 1 minute.
  4. Add the tomatoes, beans, corn, and tomato sauce. Bring to a boil, reduce heat to low, and simmer for 20 minutes.
  5. Stir in the cilantro and season with additional salt and pepper, if desired.
  6. Serve with your favorite toppings and enjoy!
