Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg

Directions
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan, or two 9 inch round pans.
In a large bowl, stir together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
In a medium bowl, beat together the eggs, oil, white sugar, and vanilla extract until well blended.
Stir the egg mixture into the flour mixture just until all of the ingredients are moistened.
Fold in the grated carrots and walnuts (if using).
Pour the batter into the prepared pan.
Bake for 30 to 40 minutes in the preheated oven, or until a knife inserted into the center of the cake comes out clean.
Allow the cake to cool before serving.
