Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 3 eggs
- 1 cup vegetable oil
- 2 cups white sugar
- 2 teaspoons vanilla extract
- 3 cups grated carrots
- 1 cup chopped walnuts (optional)
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan, or two 9 inch round pans.
- In a large bowl, stir together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
- In a medium bowl, beat together the eggs, oil, white sugar, and vanilla extract until well blended.
- Stir the egg mixture into the flour mixture just until all of the ingredients are moistened.
- Fold in the grated carrots and walnuts (if using).
- Pour the batter into the prepared pan.
- Bake for 30 to 40 minutes in the preheated oven, or until a knife inserted into the center of the cake comes out clean.
- Allow the cake to cool before serving.
