Ingredients
- 1 onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1 teaspoon ground black pepper
- 8 cups chicken broth
- 2 cups diced cooked chicken
- 2 cups cooked white rice
- 1/4 cup freshly chopped parsley
Directions
- In a slow cooker, combine the onion, carrots, celery, garlic, thyme, oregano, paprika, and black pepper. Pour in the chicken broth and stir to combine.
- Cover and cook on low heat for 6-8 hours.
- Add in the cooked chicken and cooked rice, stir to combine, and cook for an additional 30 minutes.
- Stir in the fresh parsley and serve.
