Ingredients
1 package wide rice noodles
2 tablespoons vegetable oil
2 cloves garlic, minced
1 shallot, minced
1 red bell pepper, thinly sliced
1 cup mushrooms, sliced
1/2 cup carrots, julienned
1/2 cup fresh basil, chopped
1/4 cup soy sauce
1 tablespoon fish sauce
1 tablespoon brown sugar
1/4 teaspoon red pepper flakes
1/4 teaspoon ground black pepper
1/4 cup fresh lime juice
1/2 cup cooked protein of your choice (optional)
Directions
Soak noodles in hot water for 10 minutes, then drain and set aside.
Heat oil in a large skillet or wok over high heat.
Add garlic and shallot and cook until fragrant, about 1 minute.
Add bell pepper, mushrooms, carrots, and basil and cook for 3 minutes.
Add soy sauce, fish sauce, brown sugar, red pepper flakes, and black pepper and stir to combine.
Add noodles and stir to combine. Cook for 2 minutes.
Add lime juice and cooked protein (if using) and cook for 2 more minutes.
Serve hot.
