Ingredients

  • 4 ears corn, husked
  • 1/4 cup mayonnaise
  • 1/4 cup cotija cheese, crumbled
  • 1/4 cup cilantro leaves, chopped
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon lime juice
  • Salt and pepper, to taste

Directions

  1. Prepare the grill for direct heat cooking over medium-high heat.
  2. Carefully brush each ear of corn with a small amount of oil.
  3. Grill the corn for 10-15 minutes, turning occasionally, until the kernels are lightly charred and tender.
  4. In a small bowl, mix together the mayonnaise, cotija cheese, cilantro, chili powder, garlic powder, smoked paprika, and lime juice.
  5. Remove the corn from the grill and brush the mayonnaise mixture on each ear of corn.
  6. Sprinkle with salt and pepper and serve.
