Ingredients

  • 2 tablespoons olive oil
  • 2 pounds boneless, skinless chicken thighs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground black pepper
  • 1 teaspoon kosher salt
  • 1 (14.5 ounce) can diced tomatoes with juice
  • 1 (8 ounce) package high fiber black bean pasta

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the chicken thighs and season with garlic powder, onion powder, oregano, pepper, and salt. Cook for about 6 minutes, turning once, until the chicken is lightly browned.
  3. Transfer the chicken to a slow cooker. Pour the diced tomatoes and juice over the chicken.

  5. About 30 minutes before serving, prepare the black bean pasta according to package directions.
