- 2 pounds boneless, skinless chicken thighs

- 1 (14.5 ounce) can diced tomatoes with juice
- 1 (8 ounce) package high fiber black bean pasta
Directions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken thighs and season with garlic powder, onion powder, oregano, pepper, and salt. Cook for about 6 minutes, turning once, until the chicken is lightly browned.
- Transfer the chicken to a slow cooker. Pour the diced tomatoes and juice over the chicken.
- Cover and cook on low for 6 to 8 hours.
- About 30 minutes before serving, prepare the black bean pasta according to package directions.
- Serve the chicken and sauce over the black bean pasta.
