Ingredients

  • 1 cup long-grain white rice
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 1/2 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (10-ounce) package of frozen spinach
  • 1/4 cup freshly chopped parsley
  • 1/4 cup freshly chopped dill
  • 1/4 cup freshly chopped mint
  • 1/4 cup freshly squeezed lemon juice

Directions

  1. In a medium saucepan, heat olive oil over medium heat. Add the chopped onions and sauté for about 5 minutes, until softened.
  2. Add the garlic and sauté for another minute.
  3. Add the rice and sauté for another 2 minutes.
  4. Add the vegetable broth, oregano, cinnamon, nutmeg, paprika, salt, and pepper. Stir to combine.
  5. Bring the mixture to a boil, reduce heat to low, and let simmer for about 15 minutes, until the rice is cooked.
  6. Add the frozen spinach and stir to combine. Let simmer for another 5 minutes, until the spinach is heated through.
  7. Stir in the parsley, dill, mint, and lemon juice. Taste and adjust seasonings if needed.
  8. Serve immediately.
