Ingredients
- 1 cup long-grain white rice
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 1/2 cups vegetable broth
- 1 teaspoon dried oregano
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (10-ounce) package of frozen spinach
- 1/4 cup freshly chopped parsley
- 1/4 cup freshly chopped dill
- 1/4 cup freshly chopped mint
- 1/4 cup freshly squeezed lemon juice
Directions
- In a medium saucepan, heat olive oil over medium heat. Add the chopped onions and sauté for about 5 minutes, until softened.
- Add the garlic and sauté for another minute.
- Add the rice and sauté for another 2 minutes.
- Add the vegetable broth, oregano, cinnamon, nutmeg, paprika, salt, and pepper. Stir to combine.
- Bring the mixture to a boil, reduce heat to low, and let simmer for about 15 minutes, until the rice is cooked.
- Add the frozen spinach and stir to combine. Let simmer for another 5 minutes, until the spinach is heated through.
- Stir in the parsley, dill, mint, and lemon juice. Taste and adjust seasonings if needed.
- Serve immediately.
