Ingredients
1 cup long-grain white rice
1 onion, chopped
2 cloves of garlic, minced
2 tablespoons olive oil
1 1/2 cups vegetable broth
1 teaspoon dried oregano
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (10-ounce) package of frozen spinach
1/4 cup freshly chopped parsley
1/4 cup freshly chopped dill
1/4 cup freshly chopped mint
1/4 cup freshly squeezed lemon juice
Directions
In a medium saucepan, heat olive oil over medium heat. Add the chopped onions and sauté for about 5 minutes, until softened.
Add the garlic and sauté for another minute.
Add the rice and sauté for another 2 minutes.
Add the vegetable broth, oregano, cinnamon, nutmeg, paprika, salt, and pepper. Stir to combine.
Bring the mixture to a boil, reduce heat to low, and let simmer for about 15 minutes, until the rice is cooked.
Add the frozen spinach and stir to combine. Let simmer for another 5 minutes, until the spinach is heated through.
Stir in the parsley, dill, mint, and lemon juice. Taste and adjust seasonings if needed.
Serve immediately.
